Lentil Burrito Meat

This instagram user has a lot of recipies for ‘recycling’ vegetable scraps from other recipies. This one is specificially for reusing the stem of broccoli, and makes a great burrito filling. The filling is very filling and can also be re-heated easily in a frying pan if you end up making too much.

Ingredients⌗
These amounts produce 6 burrito fillings, serves 2 people.

Lentils | 400g |
Broccoli stem, shredded | 1-2 |
Red union, sliced | 1 |
Sun dried tomatoes, chopped | 2 |
Garlic cloves, chopped / crushed | 2 |
Tomato puree | 1 Tbsp |
Tamari sauce (or soy sauce) | 1 Tsp |
Paprika powder | 1 Tsp |
Cumin powdget | 1 Tsp |
Yeast (flakes) | 1 Tsp |
Lime juice | 1/2 Lime |
Olive oil | 1 Tbsp |
Instructions⌗
- Add the olive oil, union, garlic, sun dried tomatoes, broccoli shreddings and lentils.
- Mix the ingredients in the pan.
- Add the cumin, paprika, yeast, Tamari sauce and tomato paste.
- Fry on a high fire, stir regularly until done.
To know when you are done you kindof have to eye-ball the result. What you are aiming for is a red, slightly brownish, cohesive lump of meat. As you cook the meat the lentils will break down due to the stirring, this is what binds the whole together.
