A super-fast and easy recipe for creating a rich meal using gnocchi. Great if you like pasta but have family members demanding potatoes to be part of every meal.
These amounts produce 4 servings.
|Broccoli||1 stem (~500g)|
|Olive oil||2 Tbsp|
|Spring onion, in rings||4|
|Black olives, no pits||30|
Tip: Serve with parmasan cheese to add as topping.
- Boil the broccoli for 3-4 minutes in salted water, then strain the water.
- Heat up oil in a pan and bake the gnocchi for 6-8 minutes.
- Add in the spring onion, broccoli, ricotta and black olives.
- Salt and pepper to taste.
