For all mixes, use ground up dried herbs and leaves.

Fries

  • 3 tbsp paprika powder
  • 2 tbsp salt
  • 1 tsp union powder
  • 1 tsp black pepper
  • 1 tsp koriander
  • 1 tsp garlic powder
  • 1 tsp cumin powder
  • 1 tsp musterdseed
  • 1 tsp kurkuma
  • 1 tsp ginger powder

Gyros

  • 2 tsp thyme
  • 2 tsp oregano
  • 1 tsp paprika powder
  • 1 tsp cumin powder
  • 1 tsp garlic powder
  • 1 tsp koriander seed
  • 1 tsp parsley leaves
  • 1 tsp chili powder
  • 1/2 tsp cinamon powder
  • 1/4 tsp union powder
  • 1/4 tsp black pepper

Use 2 tbsp of the resulting mix per kilo of gyros.

Fish

  • 4 tsp dille
  • 2 tsp thyme
  • 2 tsp celery leaves
  • 2 tsp lemon grass
  • 1 tsp parsley leaves
  • 1 tsp lovage leaves
  • 1/2 tsp cayenne pepper

Bami

  • 1 tsp garlic powder
  • 1 tsp galangal
  • 1/2 tsp ginger powder
  • 1/2 tsp chili powder
  • 1/2 tsp koriander
  • 1/2 tsp lemon grass
  • 1/2 tsp kurkuma
  • 1/2 tsp cumin seed
  • 1/4 tsp cinamon

Grill

  • 4 tbsp paprika powder
  • 2 tsp white pepper
  • 2 tsp thyme
  • 1 tsp celery seed
  • 1 tsp basilicum
  • 1 tsp union powder
  • 1 tsp garlic
  • 1/2 tsp mace
  • 1/2 tsp oregano
  • 1/2 tsp koriander
  • 1/2 tsp ginger powder
  • 1/2 tsp nutmeg

Curry

  • 4 tsp paprika
  • 2 tsp ginger
  • 2 tsp fenugreek
  • 2 tsp kurkuma
  • 2 tsp koriander seed
  • 2 tsp cardamom
  • 2 tsp onion
  • 2 tsp garlic
  • 1 tsp cumin seed
  • 1 tsp cayenne pepper
  • 1 tsp cinnamon

Martine’s meat mix

  • 2 tsp mace
  • 2 tsp smoked paprika
  • 1 tsp koriander seed
  • 1 tsp ginger
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp “Piment” / all spice
  • 1 tsp cardamom
  • 1 tsp fenagreek
  • 1/2 tsp cayenne pepper
  • 1/2 tsp black pepper

Gingerbread

  • 2 tbsp cinnamon
  • 2 tsp nutmeg
  • 2 tsp clove powder
  • 1 tsp ginger
  • 1 tsp cardamom
  • 1 tsp white pepper
  • 1 tsp koriander seed
  • 1 tsp anise
  • 1/2 tsp mace
